This is the one we make the same way every time and refuse to modernise. Rye whiskey, a sugar cube muddled with two bitters we age ourselves in small oak, stirred — never shaken — over one cube until the dilution is exactly enough and not a drop more.

There is no trick here, only attention: the size of the cube, the minutes of the stir, the width of the orange twist expressed low over the glass so the oil lands on the surface and nowhere else. It rewards a slow first sip and an even slower second.
