Copper Hour
Reposado tequila, amontillado sherry, and a whisper of smoked salt — our answer to a Manhattan, built on agave instead of grain.

We wanted a stirred, spirit-forward cocktail on the agave side of the list, something with the gravity of a Manhattan but its own accent. Reposado tequila carries most of the weight; a dry amontillado sherry stands in for vermouth and brings a nuttiness the tequila doesn’t have on its own; a rinse of smoked salt tincture holds the whole thing together.
It is named for the colour it turns in the glass at last light, which is also, coincidentally, the best hour to be sitting at this bar.
