Mezcal built for smoke, not apologised for — charred pineapple cordial, a bittering agent we make from three roots, and a garnish that is set alight at the table rather than merely presented. The orange disc, studded with cloves, is briefly burnt so the oils release into the air over the cup before it ever touches the glass.
Served in black clay because the drink is dark enough to disappear into a clear glass, and this one wants to be seen. Order it if the whiskey list already feels tame.
