An amaro-forward aperitivo for the guest who finds most cocktail menus too sweet — three bitter liqueurs, one soft landing.

This exists because too many menus treat ‘bitter’ as a garnish rather than a category. Three amari layered against each other — one rhubarb-forward, one built on gentian root, one dark and syrupy — cut with a rum base just soft enough to keep the whole thing drinkable rather than austere.
It is the cocktail we recommend before a long dinner, not instead of one.
